We are proud to introduce the EPOCH Chief Chef and Chopper.  Both feature a blade of N690 stainless steel forged in a sturdy 1/16" (.0070") gauge thickness and a resilient 59 Rockwell hardness. N690 blade steel consistently meets a superior standard for overall serviceability, edge retention, slick food release and low maintenance.  The Chief Chef measures 12" overall  and a weighs of 5.3 ounces. The Chopper comes in at 11" with a weight of ??, both knives will feel amazingly lightweight and well balanced in the hand. Woody designed these chef's knives with full attention to detail, form and function.
